Ingredients and Substitutions

250 grams All Purpose Flour– You can use whole wheat flour or other flour blends; ensure they are suitable for baking.

170 ml water- I usually keep the hydration between 60-70 percent.

1 tbsp Sugar- I like the bread to have a slightly sweet flavor, and it also helps the yeast to make the bread rise faster. You can also use honey as an alternative.

1/2 tbsp Salt- Salt strengthens the gluten bonds and helps balance the bread’s sweetness.

1/4 tbsp Instant Active Yeast– If you are using Instant dry yeast, then it needs activation, so reserve some water(warm it up) from that 165 ml and mix it with the yeast and some sugar from that 1 tbsp Sugar used for the flour. You can add this mixture directly to the dry ingredients, flour, and salt.

How to make Air fryer Bread?

1. Mixing in ingredients

Mix the flour, sugar, and yeast and stir the dry ingredients. You can just dump the measured ingredients in this step, and there is no specific process that I follow. I sometimes use honey instead of sugar so then it will not be a dry ingredient in that case but still add honey and yeast together and mix them in the dough.

2. Add Salt in the end

Make sure that you add salt in the end and then pour the water and start mixing the dough till it forms a homogenous ball.

3. Cover the container and let it rest for 3-4 hours, but the more it ferments, the better. I allow mine to ferment for 5 hours because I got impatient, but you can let it sit overnight(if you still want to wait longer to make bread, then put it in the refrigerator; all the yeast gets used up, and it can result in a flat dough).

4. Once you have proved the dough, take out the dough on a flat surface with flour dusted on it and wrap the entire dough into a ball.

5. Spray some oil on your air fryer(so the bread won’t stick to the air fryer basket). Now, place the bread in the air fryer and let it rest for 30 minutes to an hour for the final proofing.

6. Cook the bread at 190°C or 375°C for 10-12 minutes.

7. Check it at the ten-minute mark; if you are happy with the coloration on the bread, then turn it around and let it cook for another 5-7 minutes. If you want more browning, cook it for 2 minutes and then turn around the bead.

What temperature to cook Air Fryer Bread?

I think 190°C is the optimal temperature to cook air fryer bread. When I tried cooking it at higher temperatures, the bread was overcooked on the top and uncooked on the inside.

This is why it is crucial to maintain the correct temperature to cook bread. You don’t want a tough exterior on the outside and an uncooked interior on the inside.

How long does it take to cook Air fryer Bread?

It can take 15-20 minutes, depending on the bread’s size and the air fryer’s wattage.

You can cook it slightly longer for a nice color on your bread.

My Bread Doesn’t rise, what to do?

Make sure you are using the yeast the right way. If you use INSTANT ACTIVE YEAST, look for all three words on the label. Then you don’t need to activate it, but at the same time, it should not be old.

Make sure to store yeast in the fridge to make it last longer. If you keep it outside in a container, it will exhaust itself, and the yeast is primarily useless at that point.

Now, if the packet says INSTANT DRY YEAST, here ‘DRY’ is the keyword, then you need to activate it in warm water and sugar mixture.

By activating, I mean mix it into warm water and sugar mixture, and you will see the yeast foam up in 5-10 minutes; this means it is activated and ready to use.

Another reason the bread may not rise is because you are cooking at very high or very low temperatures. Ensure you cook the bread at 190°C and stay close to that temperature range.

The Outside is cooked, but the inside is still raw.

You cooked it at a higher temperature and may want to cook the bread at a lower temperature and cook it longer so the inside of the dough gets thoroughly cooked.

This is crucial to cooking bread. Hence, do not feel demotivated by just one bread-baking fail. If needed, make bread in small batches to test out this recipe.

VERY Important tips on cooking Air fryer bread

1. Spray oil on the air fryer basket before placing the bread dough. It will stick to the air fryer. Generously spray some oil on it.

Use parchment paper so the bread loaf doesn’t stick to the basket. I do not use parchment paper because I like the bread evenly cooked at the bottom.

2. Wait for the bread to cool down before you cut it. If you miss the bread when it’s hot, the insides clump up together, and it ruins the open crumb texture of the bread. Make sure

  • Let it rest for a minmium of 3-4 hours and you can even let it rest overnight. For this recipe, I let the dough rest for 6-7 hours.

  • After 6 hours, take the dough out on a surface with dry flour dusted on top of it so it doesnt stick to any surface and you can just bring the edges of the dough to the center and flip it to get a smooth ball.
  • Make sure to spray the air fryer basket with oil else the bread WILL STICK to the basket while cooking. Place the dough inside the air fryer basket and let it sit there for about 30 minutes.
  • After 30 minutes the dough doubles in size and now it is ready to bake. Set the air fryer at 190°C and cook the bread for 10-12 minutes.
  • Now turn the bread upside down and cook it for another 5 minutes at the same temperature.
  • Take the bread out and let it cool completely before cutting into it.

Notes

1. Spray oil on the air fryer basket so the dough doesn’t stick to the basket while proofing and cooking. You can also use parchment paper instead.
2. Make sure you check the bread after the 10 minute mark. Do not overcook it, or else the top will get extremely hard and chewy.
3. Wait for the bread to cool down else it wont cut very well, and you will not get a nice open crumb texture.
