200-gram mushrooms chopped- I had roughly 8-10 fresh button mushrooms that I chopped finely to taste amazing when used as a stuffing. When you finely chop mushrooms or veggies, they cook faster and have more flavor. I use a handheld chopper for this, and you can do the same.

1/2 onion, chopped– You can use red or white onion in this recipe. Just make sure you chop the onions finely, and you have to ensure that the thickness of both the onion and the mushroom is the same so that one doesn’t overcook before the other.

1 tablespoon butter- I use butter to cook the stuffing to add more flavor to the mushroom and onion mix.

Salt and pepper, to taste- You can add salt and pepper to the stuffing mix according to your preference or even skip it if you use stuffing ingredients that already have salt in them. These ingredients will depend on your taste and liking.

1/2 cup shredded mozzarella cheese- You can use any brand mozzarella cheese you like and it would work well with this recipe. You can also use a cheese blend if you want to try to work with different flavours and textures of different kinds of cheese.

1. Prepare the Filling: Preheat a skillet over medium heat and melt the butter now finely chop the mushrooms and onions(you can use any other veggies or meat of your liking at this step) and add them to the pan. 2. Prepare the Zucchini Boats: Wash the zucchini and cut them in half lengthwise. Use a spoon to gently scoop out the soft center of each zucchini half, creating a boat-like shape. You can not cut them in half and make a long boat, but ensure it fits in the air fryer basket. Reserve the scooped-out zucchini flesh for another use or discard.

3. Assemble the Zucchini Boats: Place the zucchini boats in the air fryer basket and cut the side up. Fill each zucchini boat generously with the sautéed mushroom and onion mixture.
